SUNDAY RECIPE: BAKED EGGS IN AVOCADO

My weekends are usually crammed with to do lists, but whenever I find the time I love trying out new recipes. This picture has been getting a lot of love on Instagram, so I thought I’d share the recipe with you guys. This recipe has two of my favourite things a.k.a. eggs and avocado in it and is super easy to make. Other than that it’s also incredibly healthy as it’s packed with omega-3s, very low in sugar and fiber-filled. Definitely worth trying out if you want to shake up your breakfast or lunch routine.

Ingredients
2 eggs
1 avocado
1 oven  🙂
salt & seasoning to your choice

Directions
Preheat your oven to 200 degrees Celcius / 425 Fahrenheit.
Slice the avocado in half and take out the pit. Scoop out one tablespoon from the center of each half.
Place both avocado halfs in a small baking dish.
Crack an egg into each avocado half. It’s no problemo if you spill a little bit.
Place in the oven for 15-20 minutes, depending on the size of the avocado and eggs.
Add your fave kind of seasoning and enjoy!
