My weekends are usually crammed with to do lists, but whenever I find the time I love trying out new recipes. This picture has been getting a lot of love on Instagram, so I thought I’d share the recipe with you guys. This recipe has a couple of my fave flavours a.k.a. banana & coconut in it and is super easy to make. Other than that it’s also incredibly healthy and you can add whatever topping you like to make it even more tasty. I love putting a slice of goats cheese on top, but this recipe also works really well with fresh fruit. This recipe is enough for one pancake, so change it up a little to make more pancakes.
2 table spoons oats
1 table spoon coconut flour
1 table spoon coconut milk
1 table spoon oil (I used olive oil)
anything you like to put on a pancake 🙂

Cut the banana in large chunks.
Put the banana chunks, oats, coconut milk and coconut floor in the blender.
Crack both eggs and add them to the mix.
Blend until you get an even mix.
Place a frying pan over medium heat and heat up the olive oil.
Poor the batter into the pan and make sure to spread it out.
Flip the pancake when bubbles start to appear.
Add your fave kind of topping and enjoy!
